Guest guest Posted November 15, 2001 Report Share Posted November 15, 2001 * Exported from MasterCook * Praline Sweet Potato Casserole Recipe By :Farm Fresh to You, Capay, CA Serving Size : 8 Preparation Time :0:00 Categories : Fruits and Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups cooked mashed sweet potatoes (or yams) 1 teaspoon salt 3 tablespoons melted soy butter 1/8 teaspoon pepper 1/3 cup orange juice 1/4 teaspoon allspice 1/4 cup brown sugar 1 teaspoon grated orange peel 2 tablespoons brandy 1/2 teaspoon cinnamon 1/2 teaspoon ground ginger (1 Tbls. fresh grated) TOPPING: 1/3 cup brown sugar 1/2 cup chopped pecans 1/2 teaspoon cinnamon Combine all ingredients. Mix well with an electric beater. Pour into a well-buttered 2-quart shallow casserole. Spread with praline topping. TOPPING: Combine ingredients and mix until well blended. Bake at 350 degrees for 30 minutes.
