Guest guest Posted November 14, 2001 Report Share Posted November 14, 2001 This recipe came with ananlysis -- adn the carbs are around 79g when using the ebly tender wheat. - (ignore mc's summary.) * Exported from MasterCook * Spice Chickpea Pilaf (Ebly) Recipe By :BBC Vegetarian 1999-11 Serving Size : 4 Preparation Time :0:20 Categories : Grain Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 7 1/16 ounces half-fat creme fraiche 1/4 cup chopped fresh cilantro plus extra cilantro to garnish 200 grams whole precooked durum wheat grains such as Ebly Tender Wheat 2 tablespoons olive oil 1 large red onion -- cut into thin wedges 2 1-inch pieces fresh ginger root -- 2 tbs finely grated 2 red chili peppers -- trimmed and finely chopped 3 cloves garlic -- crushed 2 teaspoons cumin seed -- crushed 2 teaspoons turmeric 14 1/2 ounces canned chickpeas -- drained and rinsed 3/4 cup raisins 1 cup vegetable stock 5 ounces fresh spinach -- washed 1 tablespoon sesame seeds salt and pepper 1. In a small bowl mix together the creme fraiche and coriander. Season and chill until read to use. 2. Cook the wheat in a pan of lightly salted, boiling water for 15 minutes. 3. Meanwhile, heat the oil in a large skillet. Fry the onion over a low heat for 5 minutes, stirring occasionally, until softened slightly. Stir in the ginger, chile peppers, garlic, cumin and turmeric. Fry for a further 2 to 3 minutes, stirring occasionally. Add the chickpeas, raisins and stock and cook for 3 minutes. 4. Drain the wheat thoroughly, then stir it into the chickpea mixture along with the spinach. Cook over a high heat, stirring continuously, until the spinach has wilted. 4. Serve immediately sprinkled with some fresh cilantro and sesame seeds and a spoonful of coriander creme fraiche. VARIATIONS: Substitute rice, orzo, bulgur, couscous, barley or other grains for the Tender Wheat. Substitute sour cream, Mexican crema or stirred yogurt for the creme fraiche. EACH SERVING: 547 cals, 8g fiber, 79g carbs, 20g fat, 18g protein. NOTES : Whole precooked durum wheat grain is a new product from France sold under the name of Ebly. It looks similar to pearl barley but has the same absorption qualities as risotto rice.
