Guest guest Posted November 14, 2001 Report Share Posted November 14, 2001 * Exported from MasterCook * Warm Red Cabbage and Apple Salad Recipe By :BBC Vegetarian 1999-11 Serving Size : 4 Preparation Time :0:00 Categories : Salads and Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon sunflower oil -- to saute 1 red onion -- sliced 3/4 pound red cabbage -- finely shredded 1 red apple -- cut into chunks 1 carrot -- grated 2 tablespoons balsamic vinegar 1/2 teaspoon soft light brown sugar 1/2 teaspoon wholegrain mustard 4 tablespoons walnut oil 2 small lettuce heads such as little Gem -- roughly torn 1/2 cup walnut pieces salt and pepper fresh flat-leaf parsley -- to garnish 1. Heat sunflower oil in a frying pan and fry the onion for 1 to 2 minutes. Add the cabbage and cook for a further 2 to 3 minutes. Remove from the heat and add the apple and carrot. 2. In a small bowl whisk together the vinegar, sugar, mustard and walnut oil. Season to taste with salt and pepper. 3. Arrange the lettuce leaves on individual serving plates. Spoon the warm cabbage salad over. Sprinkle over the walnut pieces and drizzle over the dressing. Sprinkle over the parsley and serve.
