Guest guest Posted November 13, 2001 Report Share Posted November 13, 2001 untested idea * Exported from MasterCook * Cauliflower with Blue Cheese Recipe By :BBC Vegetarian Serving Size : 2 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound cauliflower 1 3/4 tablespoons butter 2 spring onions -- finely chopped 1 clove garlic -- crushed 2 tablespoons all-purpose flour -- unseasoned 1 cup milk -- or more 3 1/2 ounces blue cheese -- crumbled 1 teaspoon dijon mustard pinch paprika 2 tablespoons chopped fresh flat-leaf parsley plus extra parsley for garnish salt and black pepper Break cauliflower into large florets. Prepare and measure the remaining ingredients. Cook the cauliflower in a large pan of lightly salted boiling water for 3 to 4 minutes until tender. Drain in a colander. Meanwhile melt the butter in a small pan and fry the onion and garlic for 2 to 3 minutes. Stir in the flour and cook for 1 to 2 minutes, stirring continuously. Gradually stir in the milk and bring to the boil, stirring constantly. Cook for 1 minute, stirring. Add the cheese, Dijon mustard, paprika, parsley and seasoning and cook gently for 2 minutes, stirring occasionally, until the cheese has melted. Do not boil. Meanwhile, preheat the broiler (grill) to high. Transfer the cauliflower to two 850ml ovenproof dishes. Pour the sauce over and grill for 2 to 3 minutes until golden and bubbling. Sprinkle over the extra parsley and serve with crusty whole-grain bread. CHEESE - Try Danish blue or Stilton Description: " 20-minute supper.
