High fat and carbs but it looks festive. it's a baked sweet potato for one. with tomato and avocado; green onion and cilantro. I've never seen dried eggplant available in the US. The sundried were the recipes second choice but I swapped them in this copy. Did the BBC Vegetarian magazine fold? * Exported from MasterCook * Baked Stuff Sweet Potato Recipe By :BBC Vegetarian Serving Size : 1 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 12-oz whole sweet potato -- up to 16 oz 2 tablespoons olive oil -- divided 1 green onion pinch red pepper flakes 1 firm ripe tomato 2 3-gram each sun-dried tomato halves, oil packed -- drained 1 6-oz each ripe avocado 1 tablespoon chopped fresh cilantro salt and black pepper 1. Scrub the potato. Pierce several times with a fork and place on the microwave turntable or base. Cook on high for 5 minutes until tender. 2. Preheat the broiler (grill) to high. 3. Finely chop the green onion. Roughly chop the tomato. Chop the sun dried tomatoes. Peel and pit the avocado; roughly chop. 4. Cut a slice from the length of the potato to make a lid and scoop out all the flesh to leave a thin shell. Place the potato shell and lid next to each other on a baking tray and brush with half the oil. Broil for 3 to 4 minutes, turning frequently, until lightly golden and crisp. 5. Meanwhile, lightly mash the potato flesh with a fork. Stir in the onion, chili flakes, avocado, tomato, sundried vegetable, cilantro and remaining oil. Season well and spoon the mixture into the potato shell. Serve the filled potato and lid with salad leaves. VARIATION: use other dried vegetables, rehydrated according to the package instructions. Dice for the recipe. Try a slice of dried eggplant.
