Guest guest Posted November 12, 2001 Report Share Posted November 12, 2001 * Exported from MasterCook * Wild Mushroom Pate Sandwiches Recipe By :Book of Tea and Herbs, (Cole Group) Serving Size : 0 Preparation Time :0:20 Categories : Teatime Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon extra-virgin olive oil 1/2 cup chopped shallots 2 large garlic cloves -- minced 10 ounces mixed wild mushrooms -- chopped (porcini, cremini) 2 teaspoons fresh marjoram -- chopped or 3/4 teaspoon dried 1 teaspoon grated lemon zest 3 tablespoons grated soy Parmesan cheese 1 tablespoon fresh lemon juice 2 tablespoons finely chopped fresh parsley Salt and pepper -- to taste Saute shallots and garlic in olive oil over medium-low heat in a large, nonstick skillet until translucent. Add mushrooms, marjoram and lemon zest. Cover skillet and cook until mushrooms are tender. Uncover and cook over high heat until mushrooms brown. Transfer mixture to the bowl of a food processor fitted with a steel blade and add cheese and lemon juice. Puree mixture, mix in parsley and season with salt and pepper. Cover and set aside. Trim crusts from bread and cut into desired shapes. Spread pate between two slices and store in an airtight container.
