reduced carb sweet potatoes

holidays are rough. finding low carb ways of preparing traditional dishes!

 

My low carb low sugar and my diabetic diet cookbooks avoid potato recipes. One

gives an idea -- for reduced-carb sweets. It suggests we forget adding

sweetener and make the potatoes develop their own sugar. Roast chunks with a

little olive oil and pepper until caramelized. I'm thinking a splash of

balsamic would emphasize the taste.

 

Another book suggests same technique of baking first then adding diet maple

syrup with currants and nutmeg.

Oven Roasted Sweet Potatoes

1 1/2 pounds sweet potatoes

3 tablespoons extra virgin olive oil -- pure pressed

freshly ground black pepper -- to taste

 

Preheat oven to 450F. Peel potatoes and cut into 1.5-inch chunks. Toss with

olive oil and black pepper. Spread in a single layer on a greased baking sheet.

Roast about 20 to 30 minutes, turning occasionally, until evenly browned and

tender.

Caribbean Sweet Potatoes

6 6-oz each sweet potatoes

1/4 cup reduced calorie pancake syrup

or pure maple syrup (See note)

1/4 cup currants -- soaked (See tip)

salt and freshly ground black pepper

pinch nutmeg

vegetable cooking spray

 

Scrub the potatoes and pierced several times with the tines of a fork. Preheat

the oven to 350F. Lightly oil a baking sheet and place the sweet potatoes on it,

not touching one another. Bake for about 1 hour, or until tender. Remove the

potatoes to cool and leave the oven on. When the potatoes are cool enough to

handle, halve them lengthwise and scoop the pulp into a bowl. Mash with a fork

or blend with an electric mixture until fairly smooth.

 

Add the syrup, drained currants, salt and pepper, and nutmeg. Mix until smooth

and well blended.

 

Spray a large casserole with cooking spray and transfer the sweet potato mixture

to the dish.

 

Return the potatoes to the oven for 15 to 20 minutes, until heated through.

 

TIP - Soak the currants for 10 minutes in hot water and drain well.

NOTES : The maple syrup and currants make this dish a nicely sweet accompaniment

to a turkey dinner. Be sure to count carbs as 1/2 cup of this dish has twice the

carbs as a plain boiled sweet potato. Real maple syrup in place of reduced

calorie pancake syrup increase the carb level by 5 grams. Light pancake syrups

vary a great deal; check the product label.
