My low carb low sugar and my diabetic diet cookbooks avoid potato recipes. One gives an idea -- for reduced-carb sweets. It suggests we forget adding sweetener and make the potatoes develop their own sugar. Roast chunks with a little olive oil and pepper until caramelized. I'm thinking a splash of balsamic would emphasize the taste. Assoc. : 0 0 0 * Exported from MasterCook * Caribbean Sweet Potatoes Recipe By :Everyday Gourmet Diabetes Cookbook by Mary Donkersloot Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 6-oz each sweet potatoes 1/4 cup reduced calorie pancake syrup or pure maple syrup (See note) 1/4 cup currants -- soaked (See tip) salt and freshly ground black pepper pinch nutmeg vegetable cooking spray Scrub the potatoes and pierced several times with the tines of a fork. Preheat the oven to 350F. Lightly oil a baking sheet and place the sweet potatoes on it, not touching one another. Bake for about 1 hour, or until tender. Remove the potatoes to cool and leave the oven on. When the potatoes are cool enough to handle, halve them lengthwise and scoop the pulp into a bowl. Mash with a fork or blend with an electric mixture until fairly smooth. Add the syrup, drained currants, salt and pepper, and nutmeg. Mix until smooth and well blended. Spray a large casserole with cooking spray and transfer the sweet potato mixture to the dish. Return the potatoes to the oven for 15 to 20 minutes, until heated through. TIP - Soak the currants for 10 minutes in hot water and drain well. Be sure to count carbs as 1/2 cup of this dish has twice the carbs as a plain boiled sweet potato. Real maple syrup in place of reduced calorie pancake syrup increase the carb level by 5 grams. Light pancake syrups vary a great deal; check the product label. Nutr.
