Here are two from the Chile-Heads list over the years. I have made the first

one and I did it without the Grand Marnier. Worked just fine. Lasted forever

too. If you don't like chiles, then ignore these. The first one is excellent

though.

 

I haven't made the second one but recipes are not allowed to be posted on

Chile-Heads without them being tested. Otherwise there is tons of flaming!

Cranberry Chipotle Compote

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 tbsp vegetable oil

3 med apples

3 med pears

1/3 cup raisins

1/4 cup Grand Marnier

1 lb fresh cranberries

4 oz chipotle peppers -- chopped fine

2 tsp ground cinnamon

1 cup sugar

zest from 1 orange -- chopped fine

1/2 tsp nutmeg

1/4 cup Grand Marnier

 

Peel, core and dice pears and apples. Heat oil on medium high heat until

hot. Add pears, apples, and raisins. Saute 3-5 minutes or until soft.

 

Add 1/4 cup Grand Marnier and deglaze pan. Add cranberries, chipotles,

cinnamon, sugar, orange zest and orange juice. Stir and simmer for 40-45

minutes until it begins to thicken. Add nutmeg and 2nd 1/4 cup of Grand

Marnier and mix.

 

Refrigerate until ready to use. Makes about 1 quart.

Cranberry/Cherry/Serrano Sauce

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 bag fresh cranberries -- (1 oz) (1 to 12)

1/4 cup dried cherries

3/4 cup water

3/4 cup sugar (may substitute honey -- if you like)

1 serrano chile (to 3) -- finely minced, with

seeds

1 Pinch kosher salt

1 Tbsp lime juice (to 3) -- to taste

 

Combine all ingredients except for lime juice; cook gently til cranberries

pop. Continue to cook for another 5-10 minutes, and add 1 T of the lime

juice; taste. if too sweet, and more juice to taste. Cook another five

minutes to reduce slightly; remove from heat and cool. Refrigerate.

 

Note: Yum. More chiles can be added; serranos work better than jalapenos.

1 habanero can, of course, be substituted for the serranos; I would seed and

devein it, though. Or at least warn the guests.
