Amount Measure Ingredient -- Preparation Method

20 ounces frozen baby lima beans -- thawed

(2-10 ounce packages)

16 ounces frozen white shoepeg corn -- thawed

1 cup evaporated skim milk or soymilk

1/2 cup water

1 tablespoon margarine -- rounded tablespoon

Salt -- to taste

White pepper -- to taste

 

Makes 8 servings. Lacto/Vegan

 

This may be one of the very few dishes that originated with the first

Thanksgiving feast.

 

In a heavy saucepan, combine lima beans, corn, milk or soymilk, water and

margarine. Bring to a simmer; cover and cook over medium-low heat 5

minutes. Uncover; add salt and white pepper to taste. Serve immediately,

or can be refrigerated and reheated. Makes 8 servings.

 

PER SERVING: 154 CALORIES; 9 G PROTEIN; 1 G TOTAL FAT; 29 G CARBOHYDRATE; 1

MG CHOLESTEROL; 155 MG SODIUM; 5 G FIBER
