Lentil Confetti Salad

DRESSING

3 tablespoons balsamic vinegar

2 tablespoons olive oil

1 clove garlic, minced

1/2 teaspoon salt

1/8 teaspoon pepper

 

SALAD

1 cup dried lentils, sorted, rinsed

1 1/2 cups Green Giant Niblets Frozen Corn

2 medium carrots, thingly sliced

1 stalk celery, chopped

1 medium red bell pepper, chopped

1/4 cup chopped red onion

2 tablespoons chopped fresh basil

4 leaves leaf lettuce

 

In small nonmetal bowl, combine all dressing ingredients; mix well.

Refrigerate.

 

In medium saucepan, combine lentils and 3 cups water. Bring to a boil.

Reduce heat; cover and simmer 15 to 20 minutes or until lentils are

tender but not mushy. Drain. Rinse with cold water to cool; drain well.

 

Meanwhile, cook corn as directed on package. Drain. Rinse with cold

water to cool. Drain well.

 

In large bowl, combine cooked lentils, corn and all remaining salad

ingredients except lettuce. Pour dressing over salad, toss gently to

coat. Refrigerate at least 1 hour to blend flavors.

 

To serve, line plates with lettuce. Spoon salad onto lettuce.

NOTES : Ingredient Info: Fresh basil gives this salad an anise-like

aroma. To change the flavor, try lemon basil, cinnamon basil or

Thai basil.

 

Ingredient Substitution: To substitute fresh corn for the frozen,

remember that 1 ear of fresh cooked corn yields between 1/3 and

1/2 cup of kernels.

 

Healthy Tip: Lentils are very good source of iron and soluble

fiber.

 

Recipe Variation: To make Lentil Confetti Salad Sandwiches, stuff

pita or pocket bread with the salad, lettuce leaves and thin

slices of red onion and tomato. Drizzle the filling with creamy

curcumber-dill salad dressing.
