Light and Easy White Cake

Wet ingredients

8 ounces firm regular tofu

1 cup sugar or Sucanat

1/2 cup water

1 tablespoon vanilla extract -- or other extract

1 tablespoon lemon juice

Dry ingredients

1 1/4 cups unbleached flour or whole wheat pastry

flour

6 tablespoons oat flour -- to make, simply process rolled oats in a

blender

1 teaspoon baking soda

1 teaspoon baking powder

3/4 teaspoon salt

 

Preheat the oven to 325F. Lightly oil 12 muffin cups or an 8-inch tube or bundt

pan. Mix the wet ingredients in a blender until very smooth.

 

In a medium bowl, mix together all the dry ingredients. Pour the wet

ingredients into the bowl with the dry ingredients, and mix briefly but

thoroughly. Scrape into the prepared pan or muffin tins. (Paper muffin cups

stick to very low-fat mixtures, so it's better not to use them.) Bake 20 to 25

minutes for cupcakes and about 45 minutes for a bundt cake, until an inserted

toothpick comes out clean. Do not overbake. Cool on a rack.

 

Spice Cake: Follow the directions above, using brown sugar. Add 1 1/2

teaspoons cinnamon, 1/2 teaspoon powdered ginger, 1/2 teaspoon ground cloves,

and 1/4 teaspoon nutmeg to the dry ingredients, and 3/4 cup currants or chopped

raisins if you desire.

NOTES : 12 cupcakes or 1 8-inch tube cake. This does not work well when cooked

in a flat cake pan. It needs to be made into cupcakes or in a tube or bundt pan

with a hole in the middle. This very low-fat cake can be used instead of sponge

cake or pound cake.
