Winter-Style Fried Rice

Vegetables

 

Amount Measure Ingredient -- Preparation Method

1 tablespoon dark sesame oil -- up to 2

1/2 cup diced or quartered celery

1 cup diced onion

1 tablespoon chopped scallion roots

1/2 cup carrots -- quartered

and sliced very thin

OR cut into matchsticks

1/2 cup burdock -- quartered

and sliced very thin

OR cut into matchsticks

1 tablespoon spring water -- up to 2

if the rice is dry

2 cups cooked brown rice

Tamari soy sauce or sea salt

1 tablespoon chopped parsley

OR scallions and their roots

 

Oil and heat a frying pan; then make separate layers of the celery, onion,

scallion roots, carrots, and burdock. Pour the water into the frying

pan. Spoon the rice on top of the vegetables. Cover the pan and cook over

low heat for 15 to 20 minutes, or until the vegetables are soft and the

rice is warm. The heat should be low so the vegetables don't burn. Just

before they are done, add tamari soy sauce or sea salt to taste, and the

chopped parsley or scallions. Mix the rice and vegetables together. Cook

for 2 to 3 minutes longer and serve.
