Wash and soak the azuki beans and lotus seeds together for 3 to 8 hours. Put the kombu in the bottom of a pot. Next put the seeds on top of the kombu, followed by the azuki beans and lotus seeds. Add water to almost cover the beans. Bring to a boil. Cover, reduce the heat to medium-low, and simmer until beans are about 70 to 80 percent done, about 1 1/2 hours, adding cold water when necessary as the beans expand and original water evaporates. When the beans are 70 to 80 percent done, add approximately 1/4 teaspoon sea salt or 1 1/2 teaspoons tamari soy sauce and simmer for 30 minutes longer, or until the beans are done. Total cooking time is about 2 hours. Variation: Add 1 cup fresh Lotus root or dried soaked lotus root, cut into 1/2-inch rounds. In Japan, this dish is called " cousins-style azuki beans.
