Scallions with Miso-Vinegar Dressing

Amount Measure Ingredient -- Preparation Method

1 bunch scallions

1 tablespoon miso

1 tablespoon brown rice vinegar

1/2 cup spring water

2 tablespoons sesame seeds -- coarsely crushed

 

Cook scallions whole and then cut in 1-inch pieces. Mix miso,

vinegar, and water and pour over scallions. Sesame seeds can be

added. Also fresh tofu can be lightly boiled and mixed in for a

creamy dressing.
