Serving Size : 4 Preparation Time :0:00 Categories : Noodles and Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons polyunsaturated margarine 1/2 cup chopped onion 1 clove garlic -- finely chopped 2 cups canned tomatoes -- chopped 1 teaspoon chopped fresh oregano salt and freshly ground black pepper 1 cup cold water 2 1/2 cups broccoli florets 4 ounces whole wheat macaroni 1 cup plain yogurt 2 ounces Roquefort cheese -- or sharp cheese 1 ounce Mozzarella cheese 2 tablespoons rolled oats Melt the margarine and saute the onions and garlic. Add the tomatoes, oregano, 1 cup of cold water and seasoning. Simmer for about 20 minutes. Cook the broccoli in boiling, salted water until just tender; drain and refresh in cold water. In a separate pan, cook the macaroni in boiling water for 10 to 15 minutes, until just tender; drain and refresh in cold water. In an ovenproof dish, layer half the tomato sauce and macaroni. Add the broccoli (see garnish tip). Repeat the layers of sauce and macaroni. Beat the yogurt and cheese together, spread over the macaroni and sprinkle evenly with the oats. Bake at 400F for 30 minutes, or until the top is lightly browned. Serve with a light mint-flavored Bechamel (white sauce). GARNISH: Sliced tomato; endive; fan of cucumber slices; radish flower; fresh thyme. VARIATIONS: Replace broccoli with another vegetables, such as cauliflower or zucchini; reserve florets of broccoli. Use other pasta shapes.
