Guest guest Posted November 9, 2001 Report Share Posted November 9, 2001 * Exported from MasterCook * Vegetables Camembert Recipe By :Bryanna Clark Grogan & Joanne Stepaniak Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 12.3 oz package firm silken tofu -- drained and crumbled 3 tablespoons fresh lemon juice 3 tablespoons Dijon mustard 2 tablespoons brown rice syrup 1/2 teaspoon salt 1 cup frozen peas 1/4 cup water plus 1 tablespoon fresh lemon juice or balsamic vinegar, or 4 tablespoons nonalcoholic white wine 1 small onion -- thinly sliced 4 cloves garlic -- minced 2 red bell peppers -- thinly sliced lengthwise 2 medium zucchini -- or yellow summer squash. thinly sliced on the diagonal 2 scallions -- sliced 1 tablespoon mirin or nonalcoholic white wine freshly ground black pepper To make the Camembert sauce, place the tofu, lemon juice, mustard, brown rice syrup, and salt in a blender or food processor and process until smooth and creamy. Set aside. Thaw the frozen peas by placing them in a colander under hot running tap water. Drain and set aside. In a large wok or saucepan, heat the water and lemon juice, vinegar, or wine, and cook the onion and garlic for 5 minutes. Stir in the peppers and zucchini, and cook for 5 minutes longer. Stir in the peas and scallions, cover, and cook for 1 minute only. Stir in the Camembert sauce and mirin. Heat, uncovered, over medium-low until warmed through, stirring often. Garnish each serving with freshly ground pepper.
