Noodles and Cottage Cheeze

1/2 cup water plus 2 tablespoons balsamic vinegar,

fresh lemon juice, or nonalcoholic wine

2 large onions -- (very large) chopped

1 pound bow tie or spiral noodles

1 pound firm regular tofu -- mashed or finely crumbled

1 cup egg-free mayonnaise

1 teaspoon salt

freshly ground black pepper -- to taste

 

Heat the water and vinegar, lemon juice, or wine in a very large saucepan or

Dutch oven. Add the onions, cover, and cook on medium-high for 15 minutes,

stirring once or twice. Remove the lid and reduce the heat to medium. Cook,

stirring occasionally, for 15 to 20 minutes or longer if time permits (up to an

hour), until the onions are very sweet and caramelized. If theonions begin to

stick or burn on the bottom of the pan, add a tablespoon or two of water or wine

to help loosen them.

 

While the onions are cooking, boil the noodles until al dente; drain well and

set aside. Keep warm.

 

Stir the drained noodles into the onions, and mix well. Stir in the remaining

ingredients, adding salt and pepper to taste. Heat over medium-low until warmed

through, stirring often and watching closely so the mixture does not stick to

the bottom of the pan. Serve hot or warm.

NOTES : A soothing and satisfying entree. The special flavor comes from slow

cooking the onions until they are very sweet. It may take a little extra time.

but the flavor and simplicity of the recipe make it well worth the effort.
