Guest guest
It's chestnut season... Ellen * Exported from MasterCook Mac * Rice with Chestnuts Recipe By : Amber Waves of Grain, Alex and Gale Jack Serving Size : 1 Preparation Time :0:00 Categories : Grains Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups brown rice 1/2 cup chestnuts - soaked for several hours 5 cups spring water 1 pinch sea salt Chestnuts make the rice taste very sweet. Women and children are especially fond of this dish. Dry roast or soak the chestnuts and remove as much of the brown outer husk as possible. Wash the rice, layer the rice and chestnuts in the pressure cooker, and place over the flame. When the water is warm, add a pinch of sea salt. Put on the cover and bring up to pressure. Cook for 45 to 50 minutes. Remove from fire and let set for 5 minutes. Then lower the pressure and remove gently from the pressure cooker. * The amount of chestnuts may be adjusted for your family's taste, but generally should be about 20 percent of the amount of rice. - - - - - - - - - - - - - - - - - - Per serving (excluding unknown items): 1530 Calories; 11g Fat (6% calories from fat); 31g Protein; 325g Carbohydrate; 0mg Cholesterol; 135mg Sodium Food Exchanges: 21 1/2 Starch/Bread _____
