Gradually beat in the vinegar or lemon juice to taste, starting with just a teaspoon or two. Add salt, pepper, and any seasonings you desire. Sweetener is optional, but a little will counterbalance too much tartness. If the dressing is too thick, add a little water. If it is too thin, add more nut or seed butter. Keep in mind that the dressing will thicken a bit when chilled. Store leftover dressing in the refrigerator. There are so many butters to choose from--soynut. sesame, almond, cashew, hempseed, and more. Use one or a combination. These measures are approximations, as this recipe begs for your own creative touch. Nutr. Assoc. : 0 0 0 0 0
