Guest guest Posted November 8, 2001 Report Share Posted November 8, 2001 * Exported from MasterCook * Fresh Corn Soup Recipe By : Complete Guide to Macrobiotic Cooking, Kushi & Jack, p. 147 Serving Size : 1 Preparation Time :0:00 Categories : Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ears fresh corn 1 stalk celery -- diced (optional) 2 onions -- peeled and diced 5 cups spring water or kombu stock -- up to 6 1/4 teaspoon sea salt Tamari soy sauce Chopped parsley OR watercress or scallions OR toasted nori for garnish Strip the kernels from the con with a knife. Put the celery, onions, and corn in a pot. Add the water and a pinch of salt. Bring to a boil, lower the heat, cover, and simmer until the celery and corn are soft. Add the remaining salt and tamari soy sauce to taste, if desired. Serve with chopped parsley, watercress, scallions, or toasted nori as a garnish.
