Guest guest Posted November 8, 2001 Report Share Posted November 8, 2001 * Exported from MasterCook * Brown Rice Soup Recipe By : Complete Guide to Macrobiotic Cooking, Kushi & Jack, p. 146 Serving Size : 1 Preparation Time :0:00 Categories : Rice Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 shiitake mushrooms 1 3 inch kombu piece 1 quart spring water 2 cups cooked brown rice 1/4 cup dried celery 1 tablespoon tamari soy sauce -- up to 2 Sliced scallions -- for garnish Boil the mushrooms and kombu in the water for 2 to 3 minutes. Remove them and cut them into thin strips or pieces. Return them to the water, add the rice, and bring the mixture to a boil. Lower the heat and cook for 30 to 40 minutes. Add the celery and simmer for 5 minutes. Add tamari soy sauce to taste and simmer for 5 minutes longer. Garnish with scallions and serve. Variation: Miso may be added for a wonderful, warming soup.
