Guest guest Posted November 8, 2001 Report Share Posted November 8, 2001 * Exported from MasterCook * Barley Soup Recipe By : Complete Guide to Macrobiotic Cooking, Kushi & Jack, p. 146 Serving Size : 1 Preparation Time :0:00 Categories : Grains And Cereals Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup dried lentils 1 celery stalk -- sliced diagonally 3 onions -- peeled and diced 1 carrot -- sliced 1 cup cooked barley 5 cups spring water -- up to 6 1/4 teaspoon sea salt -- up to 1/2 Tamari soy sauce -- (optional) Toasted nori squares OR chopped parsley -- for garnish Wash the lentils and drain them. Layer the vegetables in a pot, starting with the celery on the bottom, then the onion, carrot, lentils, and barley on top. Add just enough water to cover and bring to a boil. Add sea salt just before boiling. Lower the heat and simmer until the vegetables are tender. Check the taste. Add a drop of tamari soy sauce for flavor, if desired, and garnish with nori or parsley and serve.
