I said I love the sour-saltiness of umeboshi plums. I have never had

a tea from them, though. Never even heard of the idea. Well, here it

is. But based on the comments, I guess I'll have to wait a few months

before trying it.

2 pitted umeboshi plums -- to 3

1 quart spring water

 

Umeboshi tea has a nice sour taste. It helps cool the body in summer

and prevent loss of minerals through perspiration. It is usually

served cool, and the taste should not be salty.

 

Boil the umeboshi plums in the water, reducing the heat, and

simmering for about 20 minutes. A few shiso leaves (that come with

plums) may be added to enhance flavor.
