Guest guest Posted November 7, 2001 Report Share Posted November 7, 2001 * Exported from MasterCook Mac * Creamy Leek Soup with Barley Recipe By : Amber Waves of Grain, Alex and Gale Jack Serving Size : 1 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 piece kombu -- 2-inch piece 1 leek -- sliced 1 medium carrot -- sliced 1/3 cup uncooked barley 1/2 cup mushrooms -- sliced 5 cups spring water 1 tablespoon miso Leeks are very sweet and go well in many soups. This makes a creamy, light, and colorful dish. Soak kombu and cut into small pieces. Wash leeks well and slice. Wash and cut carrot and mushrooms. Layer mushrooms, leek, carrot, and barley in a saucepan. Slowly add water and bring to a boil and simmer for 45 to 50 minutes. Puree miso in soup broth and return to soup. Simmer for 5 minutes.
