Sweet Kombu Sesame Condiment

1 piece sweet kombu -- 6-inch piece

1/2 cup unhulled sesame seeds

 

Also known as sweet tangle and broadleaf kelp, sweet kombu is

harvested off the California coast and is distributed by American

seaweed companies. We particularly enjoy it in this condiment.

 

Roast the sweet kombu in a 300-degree oven for 8 to 10 minutes until

crunchy. Wash and drain sesame seeds and roast in a skillet over

medium flame, stirring constantly. Pour on plate to cool Grind the

kombu and seeds together in a suribachi. Serve on top of rice or

beans.
