Guilt-Free Bread Spread

Amount Measure Ingredient -- Preparation Method

1 cup cold water

2 tablespoons cornstarch

2/3 cup medium-firm regular tofu

4 teaspoons tofu beverage mix -- or other good-tasting plain

dairy-free beverage powder - not bulk soymilk powder

1 teaspoon lemon juice

3/4 teaspoon salt

1/8 teaspoon paprika

1/8 teaspoon turmeric

 

In a small saucepan, mix together the water and cornstarch. Stir the mixture

over high heat constantly until it is thickened and clear. Place it in a

blender or food processor with the other ingredients, and blend until very

smooth. Place in an airtight container and refrigerate. It keeps only about a

week.

 

Garlic Spread: Follow the directions above and add the following:

1/2 tablespoon nutitional yeast flakes

2 cloves garlic, peeled

1/2 teaspoon onion powder

1/2 teaspoon dried herb of choice

1/4 teaspoon more salt
