Savory Succotash

1 large onion -- minced

2 cups lima beans

-cooked with kombu

2 cups corn -- cut from the cob

- 3 to 4 ears

1 cup carrots -- minced

2 cups spring water

2 pinches sea salt

 

Succotash, a combination of corn, beans, and vegetables, was served

at the first Thanksgiving and included sun-dried corn kernels, small

dried pea beans 9seasoned with bear fat), and large chunks of stewed

squash and pumpkin.Today it is often made with corn and lima beans.

 

Layer onions, corn, carrot, and limas in a saucepan. Add water and

sea salt. Cook over medium-low heat for 15 to 20 minutes. Garnish

with chopped parsley or scallions.
