I guess to make this the apple couscous cake mentioned in the

Thanksgiving menu, you would use apple juice in lieu of the grape

juice.

Grape Couscous Cake

Recipe By : Amber Waves of Grain, Alex and Gale Jack

Serving Size : 1 Preparation Time :0:00

Categories : Desserts & Snacks

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 cups grape juice

1/2 cup spring water or apple juice

1 pinch sea salt

1/2 cup amasake

2 tablespoons agar agar -- heaping

1/2 cup whole wheat couscous

This makes a purple, sweet, very cooling desert, resembling a cheese

cake with a crumbly taste.

Mix apple juice, grape juice, and amasake and bring to a boil with a

pinch of sea salt. Add agar flakes and boil until they are completely

dissolved, stirring occasionally. Add couscous, simmer 2 to 3 minutes

more, and let sit 5 minutes while couscous expands. Pour into baking

dish and let sit until jelled.
