Smooth Red Lentil Soup

1 small onion -- diced

1 cup butternut squash -- cut in chunks

1 cup red lentils

1 piece celery -- small

1 1/2 cups cabbage

1 cup cooked barley

2 teaspoons miso

4 cups water

 

This is a Texas-style favorite.

 

Saute onions in oil until transparent and add to lentils and

water.Bring to a boil and simmer for 20 minutes. Then add cabbage,

squash, celery, and barley. At end add a combination of dark barley

and chickpea miso for seasoning.
