Dulse with Vegetables

1/2 ounce dried dulse

1 medium carrot

1 small onion

spring water

 

The most popular seaweed in the British Isles and Canada, dulse was

known in Ireland as " dillisk " and in Iceland as " sol " where it was

customarily chewed raw until displaced by tobacco and chewing gum. In

Scotland, it was served as a popular snack. today it is still dried,

salted,and enjoyed as a crisp, crunchy snack in Nova Scotia,

Labrador, New Foundland, and other maritime provinces of Canada. We

enjoy it in salads, fried, boiled, sauteed, and cooked in other ways.

 

Pour water into a pan and bring to a boil. Reduce heat, add onions

and carrots, and cook until soft. Remove with strainer. Wash the

dulse and soak for 2 to 3 minutes.Remove from water and cut into

small pieces. Add to the carrots and onions, mix and serve.
