Guest guest Posted November 6, 2001 Report Share Posted November 6, 2001 * Exported from MasterCook * Cauliflower Soup Recipe By : Complete Guide to Macrobiotic Cooking, Kushi & Jack, p. 143 Serving Size : 1 Preparation Time :0:00 Categories : Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 head cauliflower 4 cups spring water -- up to 5 1 pinch sea salt 1/2 cup carrots cut into flower shapes -- for garnish Chopped parsley -- for garnish 1 sheet nori -- toasted and cut into strips for garnish Wash the cauliflower and cut it into chunks. Put the cauliflower and water into a pot. Add a pinch of sea salt and bring to a boil. Reduce the heat to medium-low and cover. Simmer until the cauliflower is very soft. Puree the cauliflower in a hand food mill and return to the pot with all of the cooking water. Parboil the carrot flowers in a separate pot. Remove and drain. Season the cauliflower soup with a little sea salt and simmer several minutes longer. Pour the soup into individual serving bowls and garnish with 2 carrot flowers, a little chopped parsley, and a few strips of toasted nori.
