Guest guest Posted November 6, 2001 Report Share Posted November 6, 2001 * Exported from MasterCook * Carrot Soup Recipe By : Complete Guide to Macrobiotic Cooking, Kushi & Jack, p. 142 Serving Size : 1 Preparation Time :0:00 Categories : Soups And Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups grated carrots 1 cup minced onions 5 cups spring water -- up to 6 1/4 teaspoon sea salt Sliced scallions or sliced toasted nori -- for garnish This delicious, sweet-tasting soup is cooling and I especially enjoy it during the summer. Put the carrots and onions in a pot. Add water and a pinch of salt. Bring to a boil, reduce the heat to low, cover, and simmer for 20 to 25 minutes. Add remaining sea salt and simmer for another 10 to 15 minutes. Garnish with scallions or nori and serve. Variation: For a creamier soup, dice the carrots and puree them with the onions in a hand food mill after the initial cooking.
