Guest guest Posted November 6, 2001 Report Share Posted November 6, 2001 * Exported from MasterCook * Celery Soup Recipe By : Complete Guide to Macrobiotic Cooking, Kushi & Jack, p. 142 Serving Size : 1 Preparation Time :0:00 Categories : Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 cups kombu stock -- up to 6 2 cups diced celery 1 cup diced onions 1/8 teaspoon sea salt 1/3 cup brown rice flour Tamari soy sauce -- to taste Sliced scallions or sliced toasted nori -- for garnish Put the stock, celery, and onions in a pot. Add a pinch of salt and bring to a boil. Reduce the heat to low, cover, and simmer for 15 to 20 minutes. Mix the flour with a small amount of water until no lumps remain. Slowly add the flour paste to the vegetables and broth, stirring constantly to prevent lumping. Add remaining salt and tamari soy sauce to taste. Simmer for 15 to 20 minutes over low flame. Garnish with scallions or nori and serve.
