Bistro Latino - Crisp Plantain Coins (Patacones)

peanut oil -- for frying

2 large green plantains -- cut

kosher salt -- to taste

 

PLANTAINS: peel and slice 1/4-inch thick on diagonal or lengthwise.

 

Preheat oven to 250 degrees and put an oven-proof serving platter in the

oven to heat. Heat oil in a deep fryer or heat 2 inches of oil in a deep

heavy pot to 365 degrees, hot enough to quickly cook a test piece of

plantain. Working it batches to avoid crowding the pot, fry plantain

slices until golden. As they are cooked, drain on paper towels, sprinkle

with salt and keep hot in oven. Makes 4 servings.

NOTES : Patacones was Spanish slang for the gold nuggets the con quistadores

discovered in the New World. In Colombia, patacones are served with almost

everything. When I prepare patacones at my restaurant, I slice the plantains

lengthwise. This adds to the dramatic presentation of my seafood ceviche. --Chef
