Guest guest Posted November 5, 2001 Report Share Posted November 5, 2001 * Exported from MasterCook * Soy-Free Cream Cheeze Recipe By :Bryanna Clark Grogan & Joanne Stepaniak Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup unflavored dairy-free milk 3 tablespoons quick oats -- scant 3 tablespoons raw cashew butter, or 1/4 cup raw cashews, finely ground in a coffee/spice grinder 1/2 tablespoon cornstarch -- up to 1 tablespoon, depending on how soft you want it 1 teaspoon lemon juice 1/8 teaspoon salt -- (1/8 to 1/4 teaspoon) In a blender, mix 1/2 cup of the milk and the oatmeal until the mixture is fairly smooth. Add the rest of the ingredients and blend until very smooth. Pour the mixture into a small saucepan, and whisk constantly over medium-high heat until it is thick and creamy. Microwave option: Microwave the mixture on high for 1 1/2 minutes in a medium-sized microwave-safe bowl or glass measuring cup covered with a plate. Whisk well, then cook on high for another 2 minutes. Whisk again. Scrape the mixture into a hard plastic container with a lid, and refrigerate.
