Soy-Free Cream Cheeze

Amount Measure Ingredient -- Preparation Method

1 cup unflavored dairy-free milk

3 tablespoons quick oats -- scant

3 tablespoons raw cashew butter, or 1/4 cup raw cashews,

finely ground in a coffee/spice grinder

1/2 tablespoon cornstarch -- up to 1 tablespoon, depending on how soft

you want it

1 teaspoon lemon juice

1/8 teaspoon salt -- (1/8 to 1/4 teaspoon)

 

In a blender, mix 1/2 cup of the milk and the oatmeal until the mixture is

fairly smooth. Add the rest of the ingredients and blend until very smooth.

Pour the mixture into a small saucepan, and whisk constantly over medium-high

heat until it is thick and creamy.

 

Microwave option: Microwave the mixture on high for 1 1/2 minutes in a

medium-sized microwave-safe bowl or glass measuring cup covered with a plate.

Whisk well, then cook on high for another 2 minutes. Whisk again. Scrape the

mixture into a hard plastic container with a lid, and refrigerate.

NOTES : Here is an excellent alternative to dairy cream cheese or for those who

wish to avoid using soy. Experiment with almond, rice, or coconut milk to vary

the flavor. Feel free to try a variety of flavorings, such as pineapple,

banana, or other fruit with cinnamon and vanilla, or add some fresh herbs,

garlic, or other seasoning.
