I don't include the chickpeas, capers, hot peppers, or grape leaves. * Exported from MasterCook * Greek Country Salad Recipe By :Nikki & David Goldbeck Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 Cups Romaine Lettuce -- bite-size pieces 2 Tomatoes -- cut in wedges 2 Cups Chickpeas -- drained 1 Small Cucumber -- peeled and thinly sliced 1 Cup Feta Cheese -- cut in small cubes (6 ounces) Black Olives Red Onion -- cut in thin slices Capers Pickled Hot Peppers -- optional Stuffed Grape Leaves -- cammed or homemade, optional Salt Pepper Oregano -- dried 3 Tablespoons Lemon Juice -- approximately 1/3 Cup Olive Oil -- approximately Toss lettuce with tomatoes, chickpeas, and cucumber. Top evenly with feta, olives, onion rings, and capers. Garnish as desired with hot peppers and grape leaves. Season lightly with salt (if feta is mild) and generously with pepper and oregano.
