Tomatillo-Red Pepper Salsa

1 large red bell pepper -- seeded and chopped

4 medium tomatillos -- husked and chopped

4 cloves garlic -- minced

1/2 small red onion -- chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/4 teaspoon ground cinnamon

1 tablespoon olive oil

1 pinch salt

1/4 cup chopped cilantro

 

Serves 12 to 15.

 

This simple cooked salsa highlights the citrus taste.

 

In a medium saucepan over medium heat, combine bell pepper, tomatillos,

garlic, onion, cumin, coriander, cinnamon, oil and salt. Cook 10 minutes,

stirring frequently, or until peppers are soft. Remove from heat; stir in

cilantro. Let cool before serving.
