Guest guest Posted November 4, 2001 Report Share Posted November 4, 2001 * Exported from MasterCook * Spicy Green Tomato Sauce Recipe By : Healthful Cooking, by Mary Carroll, Star Tribune 8/01 Serving Size : 8 Preparation Time :0:00 Categories : Sauces And Marinades Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups chopped green tomatoes or tomatillos 2 tablespoons apple juice 1 cup chopped white onions 1/2 cup chopped green bell peppers 1/2 cup canned diced chiles 3 cloves garlic -- minced 1 tablespoon minced fresh parsley 1 teaspoon hot pepper flakes -- or to taste Salt -- to taste Makes about 8 servings. This green sauce is delicious on grilled foods. In large saucepan over medium heat, combine tomatillos and juice. Bring to a boil. Add onions, bell peppers, chiles, garlic, and hot pepper flakes. Cook 20 minutes, covered, or until peppers soften. Add parsley and salt.
