With this basic white sauce (cheese added), the secret to thickening is in adding the milk slowly. In small heavy-bottomed saucepan over low heat, heat oil and sherry or water. Add flour; cook 2 minutes, stirring rapidly with wire whisk to prevent browning. Add milk in a slow, steady stream while whisking to break up lumps. Mixture should thicken. Add cheese and mustard; cook 1 minute, or until melted. Add salt and pepper to taste.
