Guest guest Posted November 3, 2001 Report Share Posted November 3, 2001 another pattie idea -- this one for rice (leftover even) that might work with other grains NOTES : Suppli are fried stuffed risotto balls or cakes. * Exported from MasterCook * Suppli (Italian Fried Rice Cake) Recipe By :Harvest Collection: A Vegetarian Cookbook for All Seasons Serving Size : 4 Preparation Time :0:00 Categories : Spring Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons polyunsaturated margarine 1/2 cup chopped onion 1 1/2 cups long-grain rice 1/4 cup dry white wine 4 cups vegetable stock 1/2 teaspoon saffron salt and fresh ground pepper 3 eggs 1 ounce Parmesan cheese -- grated 2 tablespoons lowfat 1% milk 4 ounces Mozzarella cheese -- 1/2-inch cubes 2 tablespoons flour 1/4 cup fresh wholemeal breadcrumbs polyunsaturated oil -- for frying Melt the margarine and saute the onion until tender. Add the rice and stir until the grains are coated. Add the wine, half the stock and the saffron, salt and pepper. Bring to a boil, stirring well, and simmer until the liquid has evaporated. Add the remaining stock. Reduce the heat and cook, uncovered, until he liquid has been absorbed. Allow to cool. Beat 2 of the eggs lightly with the parmesan cheese and combine with the rice mixture. Beat the remaining egg with the milk for the egg wash. Mold the rice mixture into small cakes or balls. Put a cube of cheese in the center of each. Dip first in the flour, then the egg wash and coat with the breadcrumbs. Fry in hot oil until golden brown. Drain and serve with a spicy sauce.
