Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

12 canned artichoke hearts -- (unmarinated)

12 white domestic mushrooms

1 cup reduced-fat Italian dressing

4 thin slices fresh mozzarella cheese

Serves 4.

Here's an unusual combination -- marinated artichoke hearts and mushrooms

-- that is a great side dish or appetizer.

Thread artichoke hearts and mushrooms onto 4 bamboo or stainless steel

kebab skewers, alternating the two vegetables. Place in self-sealing

plastic bag. Add dressing. Seal and toss to coat. Refrigerate 2 hours or

up to 8 hours.

Preheat grill to medium-hot coals. Grill, turning frequently and basting

with marinade, until golden brown, about 5 minutes. Serve with mozzarella

on the side.
