Here's an unusual combination -- marinated artichoke hearts and mushrooms -- that is a great side dish or appetizer. Thread artichoke hearts and mushrooms onto 4 bamboo or stainless steel kebab skewers, alternating the two vegetables. Place in self-sealing plastic bag. Add dressing. Seal and toss to coat. Refrigerate 2 hours or up to 8 hours. Preheat grill to medium-hot coals. Grill, turning frequently and basting with marinade, until golden brown, about 5 minutes. Serve with mozzarella on the side.
