Paglia E Fieno With Green And Yellow Squash

8 ounces spinach linguine

8 ounces regular linguine

1/4 cup olive oil

1 zucchini

cut into long thin strips

1 yellow squash

cut into long thin strips

salt and freshly ground black pepper

freshly grated Parmesan

OR soy Parmesan

 

Tuscany's " straw and hay " pasta dish is so named for its green and yellow

noodles. This theme is elaborated on here with the addition of green and

yellow squash, cut into long strips with a mandoline slicer. If you don't

have a mandoline, a sharp knife or vegetable peeler may be used.

 

Cook the linguine in a large pot of salted boiling water, stirring

occasionally, until it is aI dente, about 8 minutes. While the pasta is

cooking, heat the oil in a medium skillet over medium heat, add the two

squashes, and cook until softened, about 2 minutes. Add salt and pepper to

taste and keep warm over low heat. When the pasta is cooked, drain it and

place in a serving bowl. Add the squash mixture, sprinkle with cheese, and

toss gently to combine. Serve immediately, with extra cheese to pass at

the table. Serves 4
