Angel Hair Pasta With Parsley-Walnut Pesto

2 cups fresh flat-leaf parsley leaves -- packed

3/4 cup walnuts

1 large garlic clove -- chopped

1/2 teaspoon salt

freshly ground black pepper

1/4 cup soft or silken tofu

1/3 cup extra-virgin olive oil

1 pound angel hair pasta

 

Angel hair pasta, or capelli d'angelo, is a very fine spaghetti that is

also called capellini. Protein-rich walnuts also contain iron and

magnesium, as well as vitamins A, B, and E. Walnuts are a common

ingredient in the cuisine of the Italian region of Liguria.

 

Place the parsley, walnuts, garlic, salt, and pepper in a food processor

and pulse until coarsely ground. Add the tofu and process until

smooth. With the machine running, slowly pour the olive oil through the

feed tube and process until well blended. Set aside. Cook the angel hair

in large pot of salted boiling water, stirring occasionally, until it is al

dente, about 2 to 4 minutes. When the pasta is cooked, drain it and place

in a serving bowl. Add the pesto and toss well. Serve immediately. Serves 4
