Guest guest Posted November 2, 2001 Report Share Posted November 2, 2001 * Exported from MasterCook * Fabulous Fruit Crisp Recipe By :Susann Geiskopf-Hadler & Mindy Toomay Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup canola oil 2 tablespoons fresh lemon juice 3 pounds fresh apples or pears 1 1/2 cups fresh or frozen blueberries, blackberries, or cranberries -- see note 1 cup rolled oats 1/2 cup whole wheat flour 1/3 cup organic granulated sugar 1 teaspoon ground cinnamon 1/8 teaspoon salt Rub a baking dish with 1 teaspoon of the oil. Set aside. Preheat the oven to 400F. Place the lemon juice in a large bowl. Discard the cores of the apples or pears, and coarsely chop the fruit, tossing it with the lemon juice as you go. Add the berries to the apples and toss to combine well. Transfer the mixture to the oiled baking dish, creating an even layer in which the berries are well distributed. Place the rolled oats in a blender and grind to a coarse meal consistency. In a bowl, combine the ground oats, flour, sugar, cinnamon, and salt. Stir to combine well, then drizzle in the remaining oil about a tablespoon at a time, using your fingers to rub the oil into the dry ingredients until it is well incorporated and the mixture has a moist crumb consistency. Distribute the oat mixture evenly over the fruit and shake the dish so some of the topping settles into the fruit. Bake for40 to 45 minutes, until browned and bubbly. If you love nuts, combine some chopped walnuts, almonds, or pecans with the fruit mixture before adding the crumb topping. Note: If using frozen berries, place them in a colander and rinse briefly under warm water to melt off ant ice crystals before adding them to the dish. Nutr.
