Guest guest Posted November 1, 2001 Report Share Posted November 1, 2001 I went searching my files and this is what I came up with: * Exported from MasterCook * CRUNCHY ASIAN SLAW Recipe By : Recipe courtesy Emeril Lagasse, 2000 Serving Size : 1 Preparation Time :0:00 Categories : Bam Live Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon vegetable oil 1/2 cup red onions -- thinly sliced 1/2 cup red peppers -- julienne 1/2 cup yellow peppers -- julienne Salt Freshly ground white pepper 2 cups Napa cabbage -- shredded 1 cup carrots -- julienned & blanched Drizzle sesame oil 1 teaspoon fresh cilantro -- chopped 1 tablespoon roasted peanuts -- chopped In a sauté pan, over medium heat, add the oil. When the oil is hot add the onions and peppers. Season with salt and pepper. Sauté for 2 minutes. Add the cabbage and carrots. Season with salt and pepper. Continue to sauté until wilted, about 2 to 3 minutes. Remove from the heat and turn into a small bowl. Season to taste with the sesame oil. Cool completely. Stir in the cilantro and peanuts. Mix well.
