Mediterranean Vegetable Brochettes

Amount Measure Ingredient -- Preparation Method

1 red onion -- quartered

1/2 small eggplant -- quartered

1 small zucchini or yellow squash

cut into 4 sections

2 portabello mushroom caps -- halved

1 red bell pepper -- quartered

1 yellow bell pepper -- quartered

2 tablespoons olive oil

plus additional oil for grilling

1 tablespoon balsamic vinegar

1 teaspoon salt

2 tablespoons grated Parmesan cheese

8 cherry or grape tomatoes

 

Thread onion, eggplant, zucchini or yellow squash, mushrooms and peppers

onto 4 bamboo or stainless steel kebab skewers. Place in self-sealing

plastic bag. Add oil, vinegar and salt. Seal and toss to coat.

 

Preheat grill to medium-hot coals. Grill, turning frequently and basting

with oil, until soft and golden brown, about 15 minutes. Add tomatoes to

end of skewers; grill 1 minute. Transfer to plates. Sprinkle with Parmesan.
