" Egg " Salad Sandwiches - 5 Points

1/2 pound firm tofu -- drained and diced

1 red bell pepper -- finely chopped

1 small carrot -- finely shredded

2 green onions -- finely chopped

2 tablespoons nonfat or low-fat mayonnaise

1 tablespoon chopped fresh parsley

1 tablespoon finely chopped dill pickle

1 teaspoon prepared yellow mustard

1/4 teaspoon salt

1/8 teaspoon pepper

8 slices whole-wheat bread

shredded lettuce

 

In a medium bowl, combine all ingredients except bread and lettuce. Mix

well. Adjust seasonings to taste. Spread mixture evenly on 4 slices of

bread. Top with lettuce and remaining slices of bread. Makes 4 sandwiches.

 

Helpful Hints: For a completely egg-free version, use soy " mayonnaise "

which is a mayonnaise-style dressing that uses tofu instead of eggs. It is

lower in fat than regular mayonnaise.
