Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

8 ounces part-skim ricotta cheese

1 teaspoon minced fresh chervil

1 teaspoon minced fresh tarragon

1 tablespoon minced fresh garlic

1 tablespoon minced fresh parsley

Crackers or vegetable spears

Makes about 8 ounces.

This favorite spread is a dependable sandwich filling or appetizer dip for

the upcoming holidays. To allow the pungent herbs and garlic to permeate

the cheese, refrigerate the mixture at least 5 hours (or preferably

overnight) before serving.

In small bowl, stir together cheese, chervil, tarragon, garlic and

parsley. Place in small container, cover and refrigerate at least 5 hours

or overnight. Serve chilled with crackers or vegetable spears.
