Guest guest Posted October 31, 2001 Report Share Posted October 31, 2001 * Exported from MasterCook * Serrano Chili Rice Recipe By :Susann Geiskopf-Hadler & Mindy Toomay Serving Size : 6 Preparation Time :0:00 Categories : Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium fresh serrano chile peppers 1 tablespoon olive oil 1 teaspoon chili powder 1 1/2 cups uncooked long-grain brown rice 2 garlic cloves -- minced 2 1/2 cups defatted low-sodium vegetable broth or vegetable stock 1/2 cup tomato juice 1 teaspoon dried oregano 1/2 teaspoon salt Remove and discard the stems of the peppers and use the edge of a spoon to scrape out the seeds for a milder dish. Sliver the peppers lengthwise and set aside. Heat the oil in a heavy bottomed saucepan over medium heat. Add the chili powder and stir it around in the pan for about 30 seconds, then add the rice and stir to coat it with the oil and chili powder. Cook, stirring frequently, for about 2 minutes, to toast the rice a bit. Stir in the garlic, then add the stock, tomato juice, oregano and salt. Stir to combine and bring to a strong simmer over high heat. Cover the pan, reduce the heat to very low and cook 30 minutes. Remove the lid, distribute the chili slivers over the rice and quickly replace the lid. Cook an additional 5 minutes, then turn off the heat and allow the pot to stand without disturbing the lid for at least 10 minutes before serving. Transfer the rice to a serving bowl and toss with two forks to distribute the chili strips evenly in the rice. Serve hot.
